Ingredients

Artichokes

2 - 4 Artichokes

1 Lemon

10 Coriander seeds

10 Black pepper grains

2 Cloves

2 Bay leaves

5 Sprigs of thyme

Marinade

100 ml Olive oil (Arbequina)

8 cloves Garlic

Pinch Coarse sea salt

Garnish

Burrata

2 tbs Fresh truffle

Pinch Coarse sea salt

Pinch Black pepper

Handful Rocket

Preparation

Artichokes

Boil the artichokes in salted water with the juice of the squeezed lemon and all the spices(approx. 20 - 40 minutes depending on the size). Clean the artichokes (use a peeler if necessary and cut into +/- 24 pieces.

Marinade

Allow the still hot artichokes to marinate in the olive oil with the crushed garlic cloves and salt.

Finishing the dish

Place a burrata on each plate, open and season with salt and pepper. Divide the artichoke and arugula among the plates. Drizzle with some of the marinade and shave some fresh truffle over all plates.
